The Pursuit of the Outlier

In the High n’ Wicked blending cellar, our process is defined by a search for harmony. However, certain barrels occasionally emerge as "outliers"—singular expressions that show such immense depth and character they demand to be bottled alone rather than blended. Wahoo No. 2 is now the second of these outliers, selected in exclusive collaboration with the University of Virginia - the first was a 6-Year-Old Kentucky Straight Bourbon Whiskey, and now this second offering, a 7-Year-Old Kentucky Straight Bourbon Whiskey.

Uncompromised Character
This 7-Year-Old Kentucky Straight Bourbon Whiskey represents the pinnacle of our Single Barrel Select program. To preserve the intricate oils and esters developed during seven years in charred American white oak, we have bottled this spirit without chill-filtration at 47% ABV (94 Proof). The result is a bourbon of remarkable nuance, retaining the full-bodied mouthfeel and complexity that only a strictly curated single barrel can provide.

Production & Where to Find
This exceptional Single Barrel release yielded just 193 bottles, created exclusively in partnership with Boar’s Head Resort and Virginia Guesthouse at the University of Virginia. This extremely limited expression is available only through these two destinations, where guests can experience it in curated pours and cocktails crafted in partnership with our bartending teams. A small allocation of bottles has been set aside for purchase (Both Wahoo No. 1 & No. 2 have sold out), and once they’re gone, this barrel will never be replicated.

    Fermented entirely in a Sweet Mash process

  • Rich Honeyed pear and apple evolves into cherry pie filling with hints of clove, cinnamon and allspice - all with a subtle caramelized orange aroma throughout. There is a subtle fresh leather note on the nose backed by rich vanilla custard and brown butter.

  • A bright and soft entry with hints of citrus that gives way into subtle baking spices and tree fruits. Notes of cinnamon, cherry, black pepper, and star anise fill out a bold and complex palate that finishes clean with a subtle toffee character lingering.
